WHen I was at Restaraunt Depot I saw alot of Beef Knuckle Meat both in single, large kroyvac and by the case. What exactly is this cut of beef? would you make steaks out of it? can you use it for Pit Beef? Just curious as to what it is and what recommendations you would have in using and preparing it!
