Fried Brussel Sprouts*
1 lb fresh Brussel Sprouts 4-6 slices of bacon (I used turkey bacon) ½ cup diced Vidalia onion 1 clove minced garlic ½ cup chicken broth (optional) Salt and pepper, to taste
Pull the outside leaves off the Brussel Sprouts, discarding any that are discolored, etc. Split the sprouts in half and remove the core. Now slice each half thinly, add to the leaves.
Cut the bacon into ½" chunks. Put the bacon into a frying/saute pan with the onions and cook until crispy and the onions are translucent. Drain oil from pan and replace with chicken broth, if desired.
Add the minced garlic and stir. Turn to medium low heat.
Add the Brussel Sprouts and cover. Cook for 5-10 minutes until the Brussel Sprouts have wilted. Toss once during cooking.
Stir and serve.
