What are the benefits, if any, of buying a whole New York Strip and cutting the steaks at yourself? Cost savings, for one. For example, if you can find a decent USDA Choice Boneless Strip for around $5.49-5.99 lb with approx avg fat loss of 20-25% (+or-) equals steaks for $7.49 lb. Compare that to a supermarket or butcher shop price. You also get to personalize every steak you cut as far as thickness and fat trimmings.
