Good Morning. Since you live in the same area. You will know my problem. I just hope you know an answer. I stabilized my egg at 230 degrees. It is very windy here today. I went inside to get some tea. Came back outside it was at 310 degrees. I turned the whole egg and restabilized it. My question is. Is there a process for windy conditions or do I just need to keep watching and turning. I'm lazy and have gotten spoiled by using a Ceramic grill. It's usually stabilize then glance every now and then. Thanks, Steve

Turning the unit is good, but the winds here have a way of blowing every which way. I've found with my Large Round that after a couple hours of adjusting/re-adjusting the vents, etc, the temp does stabilize to an extent. Yup, ya gotta stay on top of it. Gotta remember, the ceramic grills thrive on oxygen and any and all wind gust thru the bottom vent just increases the temp. I have a buddy over by where you live that built a little 'blind' out of a couple scrap pieces of 4X8 plywood for windy days, such as y'day and today.

Thanks for confirming. It's staying at 270 right now. I will just watch the probe temp a little more than usual. Steve
