Recipe follows below...............I will accept any and all suggestions to improve upon this tasty feast
It was GOOD, but does need a couple of refinements. Just my humble opinion
Experimental Shrimp Scampi Pizza ( with options ) *
ΒΌ cup olive oil
1 pat of butter
2 TBS white wine
1 clove garlic minced
10-12 large thawed cooked shrimp
Shredded Italian cheese
Fresh basil leaves
Frozen cheese pizza (I used Publix 4-cheese)
I mixed the olive oil, butter, wine and garlic into a small sauce pan and cooked on medium until the garlic was soft. Removed from the heat and let cool. I cut the shrimp into 2-3 pieces each and added to the scampi mixture and let marinate a couple of hours.
I then drained the scampi 'juice' into a separate container from the shrimp.
Start cooking your cheese pizza to package instructions.
When the pizza is about 3/4 of the way done, remove from oven and "paint" the top of the pizza with the 'scampi juice'. Place back into the oven for a few minutes.
Remove from oven again and add the shrimp, sprinkle some of the Italian cheese over the pizza and add the chopped basil leaves.
Place back into your oven and cook for about 1-2 minutes more, just to melt the cheese.
Remove from oven and let sit a minute before slicing. ENJOY!
OPTIONS FOR MY NEXT EXPERIMENT:
Might just use a premade crust with NO cheese?
A frozen ONE cheese pizza?
No 'frosting' of the scampi juice?
Make sure to wipe shrimp dry before adding to pizza?
Add some broccoli for color?
