Black rice pudding is a stable on the islands of Indonesia. Easy to make and spooky for Halloween.
Simmer 1 cup of black sweet (sticky) rice in 2 cups water, 1 cup coconut milk and a pinch of salt for 45 minutes Remove from heat and ddd 3 tablespoons palm or coconut sugar. Stir well to incorporate. Let cool completely and serve with your choice of fruit and a sprinkling of shredded coconut. Mango is popular on the islands. I used blueberries. Serve with or without additional coconut milk.
