My new pre-conquest Mexican design unglazed clay bean pot has a bowl for a lid. Fill the bowl with water while the beans cook and use the heated water to add to the beans when necessary. it also makes a nice bean bowl. For it's inaugural cook, I am making Santa Maria Pinquito Beans with pinquitos, garlic, diced onion, diced green chilies and home smoked bacon. Classic Santa Maria BBQ means tri-tip. Here's one catching some smoke. Classic Santa Maria tri-tip also means red oak. I didn't have any of this so white oak bourbon barrel staves supplied the smoke flavoring. Tri-tip plated with the required Santa Maria bbq pinquito beans, salsa fresco and salad. Missing is the required garlic bread. It was in the oven when I took the photo but remembered it before serving so it was there. This morning's pinquito bean breakfast.
