CROCK POT LAMB STEW 1.5-2 lbs chunked lamb from the shoulder or leg 3-4 minced garlic cloves (or more!!) 1/3 cup flour 1.5 tsp salt ½ tsp black pepper 1 tsp sugar ½ tsp dried thyme 12 oz beef broth 3 large potatoes, peeled and cubed 1 sweet onion, cut into 8-12 chunks (not sliced) ½ - 3/4 bag of peeled baby carrots (optional) 2 stalks of celery, cut into 1" chunks 2-3 TBS canola or olive oil for frying Add the first seven ingredients to a large bowl. Toss to mix well so the meat is covered some what evenly with the flour and spices. In 2-3 batches lightly brown the lamb in a frying pan with olive oil. Move the lamb to a crock pot, cover with the vegetables and the beef broth. Cover the crock pot and cook on low for 8-10 hours or until lamb is fork tender. Enjoy!
