Cornmeal Waffles With Strawberry Syrup - Recipe from Thug Kitchen
Strawberry Syrup Ingredients
-1 lb fresh strawberries. Frozen will do if you thaw them first
-2-4T sugar. Add only if your strawberries aren’t sweet enough or the prospect of diabetes excites you.
-¼ C orange juice
-½ tsp vanilla extract
Waffle Ingredients
-2 cups almond or your favorite nondairy milk
-1 tsp apple cider vinegar or lemon juice
-1 ½ C cornmeal
-1 C whole wheat or all purpose flour
-2 T brown sugar - optional
-1 ½ T baking powder
-½ tsp salt - optional
-1/8 tsp ground cinnamon
-2 T oil - Applesauce will also work
-Cooking spray
For the syrup
Remove stems from strawberries and roughly chop into bean sized pieces
Place all ingredients into a small saucepan over medium low heat. It will look dry until the berries release their liquid
Bring to a gentle simmer for 15 to 20 minutes stirring occasionally until syrup thickens and liquid begins to evaporate
For The Waffles
Preheat waffle iron
Mix together milk and vinegar and set aside.
In a large bowl mix together cornmeal, flour,brown sugar (if using), baking powder, salt (if using), and cinnamon to combine
Make a well and add milk mixture and oil or applesauce, and whisk together until all ingredients are moistened. A few lumps is fine.
Lightly spray waffle iron plates with cooking spray.
Add batter and cook to waffle maker specifications.
Cover with strawberry syrup and serve hot
