AAB's Bourbon Ham Glaze #2
12 oz Dr. Pepper ¼ cup Red Stag* Bourbon Juice of one Key Lime ¼ cup spicy mustard ¼ cup brown sugar
Combine the mustard, brown sugar and the lime juice in a small sauce pan, stir to mix. Add the Dr. Pepper, stir, turn heat to medium and bring to a low boil, stirring frequently. Reduce heat to med-low and cook until mixture has reduced approximatley by half. Stir frequently. Now add the bourbon, stir and remove from heat.
Note: yields enough for about 4-6 glazings on an 8-10 lb half ham.
This glaze is not overly sweet, so if you are looking for a sweeter product, please increase the brown sugar and/or add about ¼ cup of cherry jelly or preserve.
