At the Keg restuarant chain in Canada is my favorite steak called the "baseball steak" I have only seen it one other place, near where i live in Florida? How do i order this cut from my butcher?
It is a small center cut Top Sirloin or Top Butt Steak cut at least 2" or thicker. You can find them in Florida at Publix supermarket under the name of "Filet of Sirloin". It's basically a Top Sirloin steak that has been cut in half.
It may not look like a 'baseball' until after it's cooked when it puffs up in the middle, making the steak look like the shape of a baseball. It needs to be cooked hot and quick and NOT well done in order for it to do this amazing feat
