Something a little different last night.....Apple/Ham/Provolone stuffed pork chops. The stuffing was...... a half Braeburn Apple, diced small 1 slice of Maple Ham, " " " 1 slice Vidalia Onion, " " " 1 slice smoked Provolone " " dash bbq rub (I used Dr. BBQ's Big Time<sweet>) dash of apple juice Combine all in a small microwavable dish. Nuke for about 15 seconds at ¾ power to get the cheese partially melted and all the ingredients adhered to each other (sticky mess). Cut a pocket into 2 double thick PorK Loin Chops (doesn't matter if it's bone-in or boneless) and stuff with the mixture. Secure with a tooth pic. Season chops with your choice of seasoning. I used the above rub. These went on the grill, direct at 400°, with a partially cooked Sweet Potato and some variety squash with Evoo, SnPnG. My plan was to cook to an internal of 150°, but time got away from me and left on until 160° (still fine). click for larger pic These were purdy dam good...if I say so meself The peaches were coated with granulated brown sugar (dark brown is best, but I was out) and grilled as the chops and squash came off the grill. Didn't take long to cook. Not pictured is the Stouffer Spinach Souffle that was in the microwave. click for larger pic
