Approx 6 lb + IBP Brisket Flat, bought at Costco 2.39 lb, slathered with Dale's Sauce and rubbed with Dr. BBQ's Big Time Bbq Rub. It's going to cook at 250° indirect with some hickory for smoke. Almost done. Plateau at 170° for 1½ hrs. Pulled at 190°, 7 hours, (crept up on me) and ready for a FTC. Notice the nice 'grain lines' Ahhhh.......poifecto!! Served (yes more than 3 oz) with fat and sugar free Broccoli Slaw, organic potatoes and carrots cooked in beef broth and a nice SA Merlot/Cab mix. I'm full Can't wait for brekfus
