Beef Short Ribs 8-10 Beef Short Ribs Dale's Sauce (I used the reduced sodium version) BBQ rub (I used the Snail rub from Paul Kirk's book) Apple Juice Apple and cherry wood chunks Rub short ribs with the Dale's Sauce and then a good liberal dusting of the bbq rub. These went on the smoker, indirect at 250° with a mix of the apple and cherry wood. After 2½ hours I foiled them with a couple ounces of apple juice and back to the cooker for another two hours. Removed from the foil, back to the indirect grill for 30-45 minutes with a light coating of bbq sauce. Prep time: 10 minutes Cooking time: 5-6 hours
