I did a BBQ for a family get together on Sunday. Menu was Beef Ribs, Pulled Pork, Baked Beans, Roasted Red Potato Salad, smoked Deviled Eggs, Macaroni Salad and homemade Key Lime pie Here are a couple of Pork Butt Shoulders getting prepped for the cook. they will be injected with a mix of Dale's Sauce and apple juice. My bbq rub will then be applied. Here's the butts cooking on the bottom, with a combo of hickory and apple wood smoke. On top is the new Red taters that had been spritzed with olive oil, kosher salt and pepper. Also the whole hard boiled eggs were dusted with Chef Wil's Grilla Shaker after a spray of olive oil. Here is all eight slabs on the Oval, 250° with some hickory and pecan smoke. While the ribs were cooking I warmed up the Pulled Pork and some beans on the other grill. Ribs are done after about 5 hours. Look good, don't they? And last but not least, is my plate of Beef Ribs, Pulled Pork w/sauce, beans, roasted red tater salad and the smoked deviled eggs. This should help my cholesterol count which is being tested this AM!!!
