This is an entry for an Iron Chef BBQ contest. Here we are with the main three ingredients...... Bone-in Pork Chops, Dates and Beer, plus some Neuske's Apple Smoked Bacon, red onion, gold delicious apple, garlic, Dale's Sauce (Publix brand) and some seasoned bread crumbs. The chops are marinating in my new handy dandy Fresh Vac with 3/4 cup of Samuel Smiths 'Nut Brown Ale', a 1/4 cup of Dale's Sauce and about three cloves of minced garlic. Into a saute pan goes 1/2 cup beer along with diced onions, apple, bacon, and the dates. A few minutes later they are all happy and awaiting the bread crumbs. The chops have been drip dried and stuffed with the beer/date mixture with a tad of Kosher salt and turbinado sugar on the outside. Grilled indirect at 350°, flipped once. .....and plated with roasted herbed potatoes and a pea/mushroom medley. Accompanied by a bottle of Merlot.
