What brand of knife do you use and do you sharpen your own?

What brand of knife do you use and do you sharpen your own? I use a combination of Henckels and Forchner's, but the best knife is the one you like "best". I like, and have, a set of Henckels...got them at Costco about 5 years ago for $175. Work great, still sharp. If you are just looking for a few knives.....chef's knife, boning knife, utility knife, etc, the best thing to do is to go to a store that handles them and 'try' them to your hand for fit and comfort. I use an older model Chef's Choice motorized diamond dust sharpener to keep them sharp and continuous use of a smooth steel to keep them in top form between sharpenings.

I have several good knives and some of my favorites were the one's I used when I worked in a meat market when I was a kid..
They are the cheap kind you can get at the resturant supply store...
I also have a couple of custom made kives...
I like to ask people that question because I know some great chefs that have only a couple and some that have hundreds..

I have a Forchner from 1972 that is still being used. I have a couple of old chef's knives from Germany..they were hand made....
I hand sharpen them on a few stones...
I sharpen most of my knives on stones..and some at different angles for different tasks...I guess you could say I am a little anal about shapening.. ;D

A novice can really ruin a good knife, that's why I usually recommend they have them sharpened by a pro...such as yourself.

A pro ..probably not..I learned because I worked as a chef for a little while and having you knives sharpend all the time gets expensive..
So I took the time to read up and I found an older guy to show me the ropes...
I can always learn something from someone!..
