Do you have any good recipes for beef short ribs on the grill/smoker? Bob, thanks for the reminder. Here is one that I do on occasion. Beef Short Ribs 6 Beef Short Ribs Dale's Sauce Wolfe Rub Bold (or rub of your choice) ½ cup apple juice Coat the ribs with a light coat of the Dale's and then rub in the seasoning. Wrap in plastic, or put into a storage bag, let sit in the fridge over night, or at least 4 hours. Set your cooker up for a 225-250° indirect cook. Throw in a couple chunks of hickory or cherry wood for extra flavor. A mix of both woods is good, too. Use a drip pan or some aluminum foil to prevent any drippings from catching fire. Cook the Short Ribs for 2½-3 hours. Move them to an aluminum foil 'boat' that the apple juice has been added to. Double wrap (heavy duty aluminum foil works best) and place back into the grill. Cook for another hour and then check the internal temperature of the ribs. If the temp is 190-195°, they are done. Take out of the foil, baste lightly with bbq sauce of your choice and put back on the grill for about 30 minutes. This will give the ribs a nice glaze.
