Two of my new favorites are Einkorn whole wheat pasta and Einkorn wheat berries aka farro. I've never been much of a whole wheat pasta fan. At least not until I found Einkorn whole wheat pasta. Einlorn is the oldest of wheat varieties. We humans have been eating it for thousands of years. It is low in gluten and nutrient dense. This pasta is good stuff. It doesn't have the graininess of other whole grain pastas and the flavor is remarkable. I've been ordering it at Vitacost. Farro has always been good stuff and I've been on a Bob's Red Mill farro kick for years which I believe is spelt but am not 100% sure of that. Spelt, Emmer and Einkorn are varieties of wheat berries that Italy refers to as farro. The chewy texture makes it a great addition to your grain consumption. I cook it in my rice cooker.
