We tend to think of our first meal of the day as breakfast foods. WFPB based breakfast foods may be oatmeal with berries, cinnamon, ground flaxseed, or perhaps spelt and blueberry pancakes, or maybe whole grain French toast made with almond milk and cinnamon, or maybe whole grain cereal with a splash of soy milk. You get the drill.
Well, how about we forget all of that. Lines blur when eating plant based. There are no rules. There never have been. All whole food plant based no oil, salt or sugar breakfasts are breakfasts of champions. Here is what I had for breakfast this snowy Sunday morning.
A huge microwaved sweet potato covered with a boatload of 3 minute microwaved dark leafy greens and spiced black beans that were in my fridge. Not shown is the handful of walnuts I was going to crumble over the top because I ate them when I wasn't looking.
