My local Publix supermarket just started carrying vacuum packed Flat Iron steaks (also Skirt and Flank steaks) ![](https://img.photobucket.com/albums/v299/askabutcher/2019/flatiron.jpg) This one was just little over a pound. I'm guessing because it was so much thicker in the middle ![](https://img.photobucket.com/albums/v299/askabutcher/2019/Mar2319Flat3.jpg) My suggestion? Find a Flat Iron around 1 lb or less.
