Great article! I also sous-vide but not as often as I thought I would when I bought my circulator. There are many things I still haven't tried with it. I also use a torch occasionally for the sear. Its not as good a sear as a smoking hot pan but there's one less pan to clean up when I'm done and I get to play with fire.
