Sometimes when I break my diet I smash it to pieces. These are not Italian-American dishes. They are authentic Italian dishes making use of few ingredients and only the finest available. Plan on a good six hours to work your way through. AntipastiBarchette di radicchio (Radicchio “Boats” Filled with Mascarpone, Gorgonzola, Glazed Walnuts and drizzled with honey) Primi Piatti Cacio e pepe (Cheese and Pepper) A Roman classic that was recently "discovered" by the US. So simple. So delicious. Ingredients: Pasta, Pecorino, Black Pepper Secondi Piatti Parmigiana di melanzane (Eggplant Parmesan) Ingredients: Eggplant, flour, eggs Eggs are used in southern Italy. The dish is vegan everywhere else. No eggs, just flour. Just kidding--- there's plenty of fresh mozzarella in there. Simple tomato sauce Ingredients: Imported D.O.P. Certified San Marzano tomatoes, a few lightly crushed garlic cloves, a few fresh basil leaves, a few drops of evoo. InsalataA leafy green salad dressed with evoo, red wine vinegar and oregano DolceBudino di ricotta (Ricotta Pudding with strawberry coulis) Ingredients: Ricotta without additives, eggs, flour, sugar Coulis: Fresh ripe organic strawberries, lemon juice, sugar
