The plant based philosophy, as an intellectual endeavor, is a holistic approach to well being based upon one concept. Health. One’s mental, physical, and emotional health, for they are inseparable, the health of the planet, and the health and well being of the other sentient creatures that share our speck of dust in the universe. But let's limit this discussion to us.
Let’s imagine for a moment that your body (brain included) is an automobile. Like all machines, it must be properly maintained for peak performance and long life. Its energy requirements must be met with the correct fuel. We all know what happens when sugar is poured into the gas tank. Your car must be run. It must be run to lubricate the engine and seals.
Operating within the plant based philosophy is to fuel yourself only with foods that are beneficial. They must be nutrient dense, low fat, high fiber, high antioxidant for optimal health which includes the mental and emotional components of health as well as the physical. They cannot be separated. Only put things in your mouth that will optimize your performance and longevity. This includes plenty of fresh water.
Operating within the plant based philosophy is to strengthen and maintain the body you were born with through proper nutrition, exercise and an active lifestyle. The body wants to move and it must move to promote the mental and emotional components of health as well as the physical.
Is protein the issue or is it fiber?
Our minimum daily requirement of anti oxidants, fruits and vegetables as set down by the US Government almost demand a plant based diet. But one must read between the lines. MINIMUM daily requirement of fruits and vegetables is 9 servings per day. The MINIMUM daily requirement of anti-oxidant intake is 8-11,000 anti-oxidant units/day. Our MINIMUM daily requirement of fiber is 30gms.
Maine Baked Beans With Brown Bread

Maine Bean-Hole Baked Beans
Ingredients:
2 pounds Jacobs Cattle, Soldier, or Yellow Eye dried heirloom beans
3 tsp salt (or less) I use 1
2 tsp dry mustard
½ C molasses
½ cup sugar
1 medium onion, quartered
4 T Earth Balance non-dairy butter substitute
Directions:
Soak beans overnight. Drain and rinse
Place ingredients in a 2 lb bean pot or small dutch oven
Pour enough water over beans to cover.
We will bake these in an oven instead of a hole in the ground.
Cover and bake 6 hrs at 300 - 325 degrees F
Keep water over beans to keep moist

I use this recipe but substitute the buttermilk with a soymilk/vinegar standard buttermilk replacement mix.
