I'm looking for the best cut of beef and pork for making jerky. Currently I use loin and peeled knuckle. I'm pretty happy with the beef, but is there a leaner pork cut? I seem to lose an awful lot in the trim. Is cushion meat fatty? As for the beef, I've tried inside round, but the thick layer of dense fat takes a lot of work to remove. Bottom line - I'm looking for lean cheap cuts.

Bottom line - I'm looking for lean cheap cuts. For beef I would recommend the Bottom or Eye Round. Some folks even use the Shoulder Clod or roast, but it requires quite a bit of trimming. If you could buy a "peeled" Top Round, that's still the best and the fat has been removed. I would look for "Select" grade or lower, as it's leaner than "Choice" Cushion meat is too fatty for jerky, it is out of the shoulder. It appears lean, but still more fat than you would like. It would be my 3rd choice after the loin and tenderloin. For pork, other than a lean Loin, I suggest the Pork Tenderloin. You might have to trim off the silver side, but then I would slice thin on a bias to make the slices bigger, maybe pound thinner if you want.

Thanks. I just looked up bottom round on suppliers website. They describe it as USDA SELECT GRADE BEEF BOTTOM ROUND FLAT R/W BEEF ROUND OUTSIDE FLAT . What does all that mean?

Thanks. I just looked up bottom round on suppliers website. They describe it as USDA SELECT GRADE BEEF BOTTOM ROUND FLAT R/W BEEF ROUND OUTSIDE FLAT . What does all that mean? Basically what it says.....bottom round from the outside round. The top round is the "inside" round. "Select" grade is one grade below "Choice". "Flat" means that the Eye Round is not attached.
