I learned about Cuban sandwiches here then made the mistake of telling my Cuban sandwich crazed daughter about it. She harped on this for weeks before deciding on a trip to Miami to get one since I was to slow about it. She's in Key West right now and let me know I'd better have a tasty Cuban sandwich recipe down before she gets back and so here we are. My first Cubano. I removed the bone from a 9 pound pork butt, rolled and tied it, and set it in a mojo brie for 12 hrs  The next day, make the mojo marinade  I set the the brined butt in this marinade for 8 hrs  Then set it in the cooker for an overnight low and slow  Pulled it at 170ºF internal for slicing and grilling. Into the freezer it went to quickly chill for easier slicing  Chef Roi Choi's Cubanos finished with all of the right stuff. Grilled sliced ham, grilled sliced pork, great pickles, mustard mustard mustard, butter butter utter, and home baked Cuban bread. Awesome sandwich.  Not the best pic but these were flying off of the shelves.

I just watched the movie 'Chef' for the first time. I knew I was doing Cubanos before the opening credits finished rolling. One 8 pound pork butt in the brine for 14hrs.  The marinade ingredients before trowing them into my Vitamix. Marinate for 14 hrs  Pork butt hits the cooker. It looks washed out and kinda nasty after such a long soak in spiced rum and citrus juices but that will change  I would have liked to use a picnic but those have become difficult to find locally. As long as it's pork shoulder I'm a happy guy. No pix of it finishing because it was done at 5:00am and I was in no mood for photography Roy Choy sez it should still be a little pink in the middle so pull it at slicing temps. 160-170F should do it  My plancha aka Cuisinart Griddler  I didn't have time to bake Cuban Bread this time and by that I mean I forgot to make the starter a day ahead. A large loaf of soft French bread was a good substitute. Giant Cubano on the plancha  Why we all need Cubanos in our lives  This Cubano fed 2 very hungry people  Netflix is airing a series 'The Chef Show' featuring Jon Favreau and Chef Roy Choi. Season 2 premieres Sept 23rd. Good stuff
