When you are approaching 80-100gms of fiber each day, you are plant based. A veggie burrito with rice, blue corn chips, a touch of Daiya "cheese", and red chile sauce Sauteed veggies include onion, broccoli, cauliflower, carrot, and mushrooms, with non-fat "refried" beans in a whole wheat tortilla. Non-Fat "Refried" Beans3 cups dried pinto beans soaked overnight and rinsed 8oz, or more, canned diced mild green chilies 1-2 diced white onions or 1-2 T onion granules 1 T chile powder. Plain, chipotle, or a mix Smashed garlic cloves to taste (I use a lot) or garlic powder More freshly ground or cracked black pepper that you think you need 1-2 tsp dried Mexican oregano 1-2 tsp dried thyme 1-2 tsp cumin Place all ingredients in a slow cooker. Soaked and rinsed beans go in last. Cook all day or until tender Remove some bean broth and reserve. Coarsely mash beans with a potato masher leaving some whole. Add reserved bean broth as necessary. The beans will absorb bean broth as they cool. Some people like their beans smoother and use an immersion blender. I'm not one of those people.
