Turley’s Scrambled Tofu
Ingredients:
2 T Canola Oil - I use grape seed
1 C sliced mushrooms
½ C diced tomatoes
2 T Sherry - not optional
2 T Tamari
½ lb firm tofu
2 T sliced green onions
1 C cooked rice or quinoa
Directions:
Heat oil in pan. Add tofu and saute for 1 minute
Add mushrooms, tomatoes, and green onions. Saute for 2 to 3 minutes more
Add sherry and tamari and cook for 30 seconds
Serve over cooked rice or quinoa
Serve for breakfast, lunch, or dinner. Feel free to add veggies.
