Hello - does anyone know what the following could be: Just got a boneless pork shoulder. Very Fresh, great color, good looking piece of meat. I started cutting it into large chunks, when all of the sudden a thick milky substance began pouring out of the center (about two TBLsp). Does anyone know what this may be? It did not smell bad and was slightly off white.

From Whole Foods. I have bought at least 150 lbs a year during the past several years from them and this has never happened before. Highly unusual - Could it have been a cyst that I cut into?

Yes, that's my second guess. Also, towards the back end there is a gland that you might have cut into. Here is a photo of it......
