My favorite supplier only sells 10 pound Berkshire butts. I wish to halve this into two 5 pound cuts. The original cut is always beautiful and rectangular in shape. Do I cut lengthwise down the middle or try it widthwise?

Do I cut lengthwise down the middle or try it widthwise? Cutting it lengthwise from front to back will give you two almost equal roasts. You could try it widthwise and and end up with one bone-in roast and one boneless.

Thank you so much for your reply. Not being a butcher, I tried so hard to figure out the bone structure and finally cut it lengthwise. I'm six hours into a smoker cook so we'll see. I finally reached the butcher shop (after my question to you) and they said one cut will give me a tender cut one way, but not so tender the other way. Since I am now totally confused I'll probably cook it whole the next time though being a solo I would rather do 5 pounds at a time.
Thank you for taking the time to reply to me.
