Hello I would like to know a good method to use to ensure your cutting against the grain of any cut of beef. thank you The 'grain' in beef is similar to the 'grain' in a piece of wood. See the lines running in one direction? Well, that's the grain and you want to cut AGAINST it, NOT with it (the photo's below will help). Find those lines in your steak or roast and cut across those lines.
