At the grocery store y'day morning to pick up cheese for Fri nite pizza and this 3 lb Eye Round jumped into my basket......label said it was marked down to $5.oo ;D Ahhhh...PIT BEEF!!! A good dose of Dales Sauce, kosher salt, smoked black pepper and garlic. On Junior at 250° with some cherry smoke. 1½ hours later I bumped temp to 400°, seared on all sides and then proceeded to over cook til 140° Sliced it THIN, faked some au jus and it turned out PDG, if I do say so myself
