Bacon Wrapped Brussel Sprouts Courtesy of Ronbeaux
Brussel Sprouts Half slice of bacon for each sprout BBQ Rub du jour
If possible, use frozen brussel sprouts, other wise pre-nuke the bacon for about 45-60 seconds.
Sprinkle your favorite BBQ rub over the brussel sprouts and wrap each one with half a strip of bacon. If time allows, place bacon wrapped sprouts in the freezer for about 15-30 minutes to firm the bacon up.
Heat grill to around 300-350°. Place the bacon wrapped brussel sprouts on the indirect side of your grill*, away from the flames/heat source. Cook for about 30-45 minutes until the bacon is crisp and the sprouts are al dente, turning a couple of times during cooking. For the last five minutes I cooked them direct, flipping once.
Great side dish!!!
* If using an oven, place bacon wrapped brussel sprouts on a wire rack over a baking pan.
