Just wondering if someone could fill me in on where the best bacon comes from? What state/region? what age pig? dry vs. wet smoking?
In general, who can I maximize my bacon choosing abilities?

In general, who can I maximize my bacon choosing abilities? Wow....big question there!!! Each of your above questions will have a myriad of answers and they all have merit. I prefer (when I can get it) corn cob smoked bacon from either Vermont or Iowa. I'm also partial to Nueske's Applewood Smoked Bacon. When I had the butcher shop (first one) I would buy whole slabs of cured bacon and smoke them with either hickory or corn cobs. As far as taste??? I think it's just a personal thing...like regional hot dogs or beer. Here is a link you might find interesting... Bacon of the Month Club! Btw, most of your grocery store bacon is wet cured and flavored with liquid smoke.
