I did a charity Rib Contest for the American Red Cross yesterday. One of the local restaurants provided 175 racks of ribs for the cook off, along with tables, water, electricity, beer/wine, etc.
At the last minute, I jumped in and help cook with one of the Sheriff's Dept teams and we pumped out 25 racks of Baby Rack Ribs in 4 hours. We sold out of our $1 ribs in about 45 minutes.
Great time was had by all. Kudos to Cru restaurant, Bell Tower Mall, all the participants and volunteers for this worthwhile cause.

Just a few notes and observations
As always, on short notice, these things are a PIA. If I ever get another invite and I accept, will some one please put me out of my misery? BdaddyBBQ and I busted our butts for two days trying to get ready for this, and it's just not enough time to get every thing together. I realize it was not a 'sanctioned' event, but only for charity, but the rules and procedures were changed at whim and sometimes made up on the spot. Our 25 BB ribs were the ¾ lb restaurant size, way too small to get a decent rib for judging, but we did manage to get about 12 that were just about as thick as your thumb (pics later, camera is hidden somewhere in one of the boxes). My compadre in cooking, Anthony, used a Sears gasser, loaded his ribs with sauce and cooked away....need I say more?? I used the XL strictly for the ribs, while Bdaddy used the Junior to cook wings, burgers and pizza for us and our 'groupies'. The XL is never, ever, never leaving the confines of the ODK again! Did I mention that the heat was blistering hot?
But yes, all the aggravation was for a good cause
