The "Flank Steak" is part of the Hindquarter of beef and lies near the outside of the belly. It is a very lean piece of meat and there are only two per cow. Grilled and sliced thin against the grain is a popular method of cooking. The Flank Steak was also known as the first "London Broil" and is still referred to that term in some parts of the country.
