While freezer diving the other day I found a 69¢ lb Smithfield 'enhanced/injected' Pork Shoulder. Skinned it and applied my generic bbq rub. Been on now for 6 hours and just getting into the plateau (162°). Foiled at 175° and took to 197°, total cooking time of 10 hours. Just a little plateful to get started Served with beans w/chopped pepperoni, tater salad, home grown maters and some Sticky Fingers Carolina on the PP
