Here is my favorite Brisket....a USDA Choice IBP (Iowa Beef Processors) whole packer trim brisket. This lil beaut weighs in at 16+ lbs! I prefer the 10-12lb size, but beggars cant be choosers This one is soooo close to Prime it's pathetic ;D You can see the 'natural seam' to the right that separates the 'point' from the 'flat'. Boy, this is a fatty old fart, I'll tell you that. But GOOD fat, see the nice creamy white color? Here they are all separated. The 'flat' on the left and the 'point' on the right. Ok, they are all trimmed and ready for seasoning, the fat sides are down. A six pound flat and a four pound point.....whew, lots of waste and we haven't even cooked it yet!! I like to let the brisket sit for anywhere from 24 -48 hours (normally) before smoking, but due to unforseen circumstances (long story), they went on the ceramic at 9:00 AM.
