Left overs from a good old fashioned New England Boiled dinner (ham, roast beef, or corned beef) can be chopped up to make a delicious Red Flannel Hash. My St. Patty's Day meal was cooked on the Oval this year. I took the corned beef, carrots, onions and potatoes, along with a can of beets, and chopped them up into a bowl. I then used the 'masher', just to get them blended and added some more black pepper. Into a frying pan with some butter to heat up. Served the 'hash' (Red Flannel comes from the added beets) with some poached eggs, toast and some Kiwi fruit. Not overly healthy , but a very good way to use up the left overs

Mmmmm......I'll never get tired of this Red flannel hash is just corned beef hash with the addition of beets. It’s traditionally made in New England for breakfast, with leftovers from a boiled dinner the night before, and gets its name from the somewhat obvious similarity of its colors to red flannel plaid cloth.
