I was going to do ribs for Labor Day weekend but plans changed. The sell by date on the Ribs is 9-9-06, next Saturday. I am planning to cook them next Sunday 9-10-06. I'm I OK on the date? I plan to put the dry rub on 9-9-06 then smoke them 9-10-06. Do I need to freeze them and buy some more for this weekend? I don't want to freeze them if I do not have to. Thank you

Thank you You should be OK to go. Are the ribs in a cry-o-vac pack? Make sure to keep them COLD....even partially frozen will not hurt them at all. Rubbing them down a few hours before cooking on the 10th will be the same as doing them on the 9th.

They are in a cry-ovac package. So it sounds like if I keep them COLD and rub them down on the 10th I should be fine.

Thank you Yes......however, there may be a slight 'off odor' when first opening the plastic/cryovac. This should soon dissipate, if not, run the ribs under cold water and then rub dry, they should be fine. Keep checking the ribs during the week to make sure the pkg is not leaking air or the ribs turning color. Don't be alarmed, this is only a 'maybe'. Again, you should be fine.
