I call this Beet Surprise because it surprised me You've got to try it to believe it I got this recipe idea from a very nice lady, Barb, that used to prep the salad bar at Sonny's BBQ back in the early 90's in Ft. Myers, Fl.
1-15oz can sliced beets, cut into cubes, drained, save half the juice
1-6oz can pineapple tidbits, drained, save juice
1 tsp sugar
1 tsp coconut rum, optional
Mix the juices and the sugar thoroughly until sugar is dissolved. Add enough corn starch until the mixture is slightly thickened. Stir in the beets, pineapple and rum (optional). Stir well and refrigerate. Serve cold as a side dish for your favorite barbecue.
