Not really a barbecue recipe, not really a side dish either, but think I'll put it here anyway ********************* One of the best things about left over ham is the homemade Ham Salad. Best to use a food grinder/chopper, etc, but it can be made by finely dicing the ham with a knife. If using a grinder, run it through the medium plate just once (use the coarse plate if you like 'chunky' ham) Ham Salad* 2-3 cups of ground ham, trimmed of any excess fat 2 pinch's fresh black pepper ¼ cup chopped onion ¼ cup pickle relish (or diced dill pickle) 1 TBS brown sugar 2 TBS spicy mustard 3-4 TBS mayonnaise or salad dressing Mix all together in a bowl; adust for taste and texture; refrigerate for a couple of hours and serve with cheese and crackers or make sandwiches. Makes a great filling for stuffed eggs, as well. *ALL ingredients, and the amounts, can be adjusted to your personal tastes.
