Lentils and BBQ Meat
1 lb lentils, rinsed and drained (no need to soak) 8 cups chicken or vegetable broth (or water) 1 medium onion chopped 1-2 carotts chopped 1-2 stalks of celery chopped 2 cloves garlic minced salt, pepper, bay leaf and other spices of your choice to taste BBQ meat of your choice (pulled pork, beef brisket, ham hocks, smoked chicken, etc)
In a large pan place the lentils and six cups of the chicken broth (cold or room temp); bring to a boil and then lower to simmer w/lid cocked on pan. Cook for approximately 30 minutes, stirring occasionally.
In the mean time, put the chopped vegetables and spices along with the remaining two cups of broth and place into a small pan. Cook on medium high heat until tender.
Add the Mirapoix and broth to the lentils and stir well. Add the chopped bbq meat (amount is up to you) and stir again. Let simmer, w/lid partially open, until your desired thickness is reached.
