1- three lb bag of Cole Slaw Mix 1 med green pepper, minced (optional)* 1 med Vidalia onion, minced (optional) 1 med carrot, minced 1 cup sugar** 1 tsp dry mustard 1 tsp celery seed 1 tsp salt 1 cup APPLE Cider vinegar (the brown one)*** 2/3 cup vegetable oil freshly ground black pepper
Combine slaw mix with the pepper, onion and carrot. Mix sugar, mustard, celery seed and salt in a small sauce pan. Add vinegar and oil; bring to a boil, stirring until sugar dissolves. Pour over slaw mix while still hot and toss to mix well. Refrigerate at least four hours before serving. Add plenty of fresh ground pepper as you serve. This will hold up well for several days.
* sub Jalapeno peppers, if desired
** sub turbinado or brown if you want a different taste
*** sub the white vinegar for more 'tang'
