My wife discovered one a couple of years ago that is always a hit, although not very authentic. Get one box of Jiffy Corn Muffin mix and one box of Jiffy Yellow Cake mix and combine them and the ingredients called for in each of their recipes. Pour the mix in an 8" square baking pan and bake for 25-30 minutes at 400 degrees. It produces a sweet, moist cornbread that is terrific with ribs (and almost anything else).
