I have used this rub on several occasions and we won a top 10 in pork with this rub(a variation but it was the base) on our 1st competition thanks to Desi. Thought after seeing a request for it on the Primo Forum I would put it here so it could be found more easily ;D.
From Paul Kirk's Championship BBQ:
Snail Sprinkle:
1 cup granulated cane sugar 1/2 cup seasoning salt, homemade or store bought 1/2 cup garlic salt 1/2 cup sweet Hungarian paprika 2 TBSP chili seasoning homemade or store bought 2 TBSP freshly ground black pepper 2 tsp garlic powder 2 tsp onion powder 2 tsp rubbed sage 2 tsp dry mustard 1 tsp ground celery seed 1/2 tsp ground cumin 1/2 tsp MSG (optional) 1/4 tsp ground cloves 1/4 tsp cayenne pepper
Sift all ingredients and blend well. Store in an airtight container in a cool dark place for up to 1 year.
