For all you brown rice haters out there, black rice is different. It is loaded with, not only fiber, but antioxidants as well. And it tastes fantastic.
Veggie fried (dry fried) black rice and lentils in the non stick skillet. Loaded with shredded cabbage, diced red onion, sliced mushrooms, garlic (can't have to much garlic) and I threw in a few chunks of fresh cut pineapple for a bit of sweetness.
Plated with a sliced avocado and a sprinkling of toasted sesame seeds.
This is one of my favorites. Even my adult children love it.
