We are not big fans of ham dinners here. I haven't cooked a whole ham since the eighties. Given the opportunity I'll go with just about anything else as a large roast for dinner. Ham makes good sandwiches, I'll give you that, and as a good side for breakfast eggs and hash browns but as a roast? Meh.
Somebody over bought at my local market this year. Probably the same manager who under bought packaged corned beefs for St Paddy's day. Good help is hard to find. 80 cents/pound means I'm buying ham. Come on. 80 cents/pound? Not the best ham but I've tried those and still wasn't swayed.
City ham is city ham as far as I'm concerned. Meh. I even tried a $100.00 fancy-schmancy salt block masquerading as something called "Country Ham" once. An acquired taste I'm told. I already know what salt tastes like so that won't be happening again any time soon.
I've never smoked a ham before. Never cared enough to try it. This year I did and it turned my head around.
This recipe has been making the rounds for a few years so I gave it a go. I made my own rub following the ingredient list of: Brown Sugar, Kosher Salt, Black Pepper, Granulated Garlic, Thyme, Paprika, Ground Mustard, Cayenne, and Sriracha Powder because I had all of them on hand.
My $6.00 ham hits the smoker

I've changed my mind about ham dinners. I'm a convert. Double smoked ham, even an 80 cent/pound ham, is awesome.
