This is my favorite way to cook burgers For now anyway Get the cooker smoking with your smoke wood(s) of choice. I used cherry and apple this time. Divide 1 pound of ground chuck into 4 equal pieces and give them a quick roll into balls. Let them catch some smoke while the grill comes up to temp. When the griddle is hot enough to smoke when sprayed with oil, throw the now relaxed and smoked meat balls onto a griddle. They should sizzle loudly as soon as they hit. Flatten those suckers out right away with your handy wide burger spatula. Give them a flip in front of unsuspecting guests so they can Oooo and Ahhhh at the crust. A double smash burger with cheese plated with iceberg lettuce, red onion, tomato, mustard, ketchup and chipotle Vegenaise (one of my favorite condiments). Don't forget the pickles like I did. Ugh... burger blasphemy. Eat them watching the sun set. Yes, this is part of the recipe. Presentation is everything if you want to create magic
