I have a number of quick and easy stressed out weeknight dinners up my sleeve but I'm always looking for new ones. Tonight I made something brand new to me. Trader Joe's Harvest Grain blend is a mix of Israeli couscous, Orzo, baby garbanzo beans, and red quinoa. A terrific bed for veggies. I didn't want to cook anything so I microwaved some frozen Brussels sprouts and frozen broccoli. The whole thing took 10 minutes. Not pictured is the natural apple sauce I added for a bit of sweetness and moisture. No added fat meals can sometimes benefit from purees or sauces.
